Oh-S0-Good Sweet Potato Brownies!

Fake it until you make it. That’s what they say. Well, these sweet potato brownies are master-fakers because they’re absolutely delicious. If you didn’t know they were a “healthy” brownie, you would have NO idea. Packed with natural nutrients from sweet potato, natural peanut butter, coconut flower, walnuts, and dark chocolate, these killer brownies are sure to impress the whole family. Just don’t tell the kids they’re healthy 🙂 They’ll never know *mwahahaha*

Servings: 12 brownies

Ingredients:

1.5 cups mashed sweet potato

3/4 cup natural peanut butter

1 egg

1/4 cup 100% pure maple syrup

1/4 cup dark cocoa powder

2 teaspoons cinnamon

1 tsp baking soda

3 tablespoons coconut flour

1/4 cup dark chocolate chips

1/3-1/2 cup chopped walnuts

Directions:

Preheat the oven to 350 Fahrenheit.

Grab a large bowl. Using a whisk, mix together all of the wet ingredients (mashed sweet potato, peanut butter, egg, maple syrup).

Grab another bowl. Using a whisk, mix together all of the dry ingredients (cinnamon, baking soda, coconut flour).

Also using your whisk, gently whisk together the wet and dry ingredients. Once well-mixed, use a wooden spoon to fold in the chocolate chips and chopped walnuts.

Grease an 8X8 container. Pop in the oven for 20-25 minutes.

Allow to cool for 10 minutes before cutting into pieces and serving.

These brownies will keep in an airtight container for 3 days.
