Spicy Turkey, Red Pepper, and Sweet Potato Hash

In all truth – I’ve made this recipe more times that I care to admit. As of today, I have eaten this delicious hash 28 days in a row – sometimes for lunch, sometimes for breakfast. Heck, I’ve even eaten it for supper. The point is: it’s GOOD. I’m all for simple, quick, nutrient-dense, and highly flavorful foods, and this one recipe is sure to please! PLUS it’s packed with protein and vitamins, which will leave you feeling satiated!

Servings: 6

Ingredients:

1 teaspoon coconut oil

3 cups sweet potato cub into small cubes

3/4 pound lean ground turkey

2 large red peppers, chopped

1/2 teaspoon paprika

1/4 teaspoon cumin

1/4 teaspoon turmeric

Pinch cayenne pepper

6 eggs

Greens (like arugula or microgreens)

3 avocados (optional)

Sriracha (optional)

Directions:

Add the coconut oil to a large, deep pot. Once melted, add the cubed sweet potato and cook over medium heat until almost tender (approximately 5-7 minutes), stirring frequently.

Add the ground turkey to the pot and continue cooking over medium heat until the turkey is cooked through.

Add the chopped red peppers, paprika, cumin, turmeric, and cayenne pepper to the pot. Continue to cook over medium heat until the peppers are crisp-tender (approximately 3-4 minutes). Remove from the heat. Your hash is done!

To a saucepan, fry up a sunny-side up egg. Fry up one egg for each person eating this meal.

When you’re ready to serve, for each serving, place a handful of greens into a bowl. Spoon 1/6 of the mixture on top of the greens. Top with 1/2 avocado (cut into small pieces), a fried egg, and sriracha. Voila! Delicious!
