Grilled Chicken with Strawberry Basil Salsa
This recipe makes for a delicious and nutritious weeknight dinner. What I love so much about this recipe is that it takes 30 minutes or less to prepare and cook – start to finish. If you have leftovers, I recommend creating a salad for lunch the next day. To do this: Create a bed of greens (whatever your preference). Top with diced chicken and strawberry basil salsa. Add some sliced almonds. Dress with extra-virgin olive oil, additional aged balsamic, salt, and pepper. Voila! Easy meal prep.

INGREDIENTS:
3 cups fresh strawberries, thinly sliced
1/2 cup fresh basil, roughly chopped
1/2 cup feta cheese, crumbled
1 shallot, diced
2 tablespoons sweet, aged balsamic vinegar
Salt and pepper to taste
10-12 chicken tenderloins
Salt and pepper
DIRECTIONS:
To make the strawberry basil salsa: In a large bowl, combine the strawberries, basil, feta cheese, diced shallot, balsamic, and salt and pepper to taste. Adjust seasonings to your liking. Set the salsa to the side.
Season the chicken with salt and pepper and cook on the grill until cooked through (approximately 5 minutes per side).
Spoon the strawberry basil salsa over the chicken tenderloins, and enjoy!
