Sweet Potato Toast
Sweet potato toast is all the rage these days. But what the heck is it? And is it as easy to make as it looks? Does it even taste good? I am here to answer those questions for you!
First, sweet potato toast is a whole-food substitute for regular toast. It is literally peeled and sliced sweet potato that has been toasted and acts as “bread” for you to top with whatever your heart desires. Second, YES it’s easy to make, but I will teach you a couple of hacks. Many of the recipes on Pinterest try to make it sound simpler than it is, and that leaves people feeling frustrated and uninterested in sweet potato toast. Lastly, yes! It tastes good. If you like the slight sweetness to sweet potatoes, you’ll like sweet potato toast.
INGREDIENTS:
Sweet potato, peeled
DIRECTIONS:
Once the sweet potato is peeled, slice into 1/2 inch slices. I suggest you make the slices tall enough that they won’t fall down and get lost in your toaster – this is hack #1.
Now that your sweet potato is all sliced up, it’s time to “toast” them. HACK: lightly poke the slices you’ll be using with a fork all over. Toss the slices in the microwave for one minute. This softens the sweet potato and makes it quicker to toast. Many recipes tell you to just pop the sweet potatoes straight in the toaster. But guess what? This doesn’t work so well! It takes multiple toasts before it is ready, the outside usually burns, and the inside remains uncooked and crunchy. Trust me: Fork, poke, microwave 1 minute FIRST.
Then pop the sweet potato slices in the toaster for 1 or 2 times, depending on your taste.
Top with whatever your heart desires!!
