Delicious Vegetarian Quiche

A vegetarian quiche is a healthy, delicious meal that you can whip up even when you only have a few ingredients on hand. You can also find a vegan version of quiche and other breakfast ideas here You only need baking supplies to whip up a crust, some vegetables, and eggs. Parmesan cheese is also a nice addition. Most of us have these items in our pantry and refrigerator at all times. This is a great way to use up leftovers, or a creative way to include those healthy fresh veggies from the garden. Practically any vegetables you have can be used, and you will have a great meal in no time that your family will enjoy. Now, let’s get started with the recipe.
For a homemade crust, you should mix one cup of flour with ½ teaspoon of salt. In another bowl, beat together ¼ cup of olive or canola oil and ¼ cup of ice water. Pour the oil and water mixture into the flour and salt mixture. Then, once combined, just press into a nine-inch pie plate. That’s all there is to it. You now have a tasty homemade crust.
The next step is to lightly saute your vegetables. You can use any vegetables that you have available. Some popular ones include onion, green or red peppers, zucchini, tomatoes, and mushrooms. Melt two tablespoons of butter in a pan on medium heat. After cutting up your vegetables to the desired size, add them to the pan and lightly cook them. Add salt and pepper to taste. Some people like to include ¼ to ½ teaspoon of curry powder as well. If you like curry powder, feel free to add that in to taste. You only need to soften up the vegetables, so they will be done in just about three minutes.
Next, crack five eggs into a bowl and add ¼ cup of milk and ¼ cup of parmesan cheese. You can use the kind that comes in a can, or you can grate your own. If you don’t eat cheese, you can omit it from the recipe. Whip these ingredients together and put to the side. Add your cooked vegetables to your crust and spread them out evenly. Then, pour your egg mixture over the vegetables. You are now ready to bake it.
Put your quiche into a pre-heated 350 degree oven and cook for 35-40 minutes, or until a knife inserted into the center of the quiche comes out clean. After it’s done cooking, let cool for five minutes before cutting and serving. This recipe makes 6-8 servings.
This is a wonderful vegetarian meal to make on a hot summer day. It’s both light and filling at the same time. You can serve it with a nice salad and some crusty bread. It is also perfect comfort food to have on a cold winter night. It is a healthy meal, and will keep you filled up because of the protein in the eggs. You can enjoy this versatile recipe for breakfast, brunch, lunch, or dinner.
