Pear with Gorgonzola and Prosciutto

Here’s another healthy, fresh, Italian-inspired appetizer that’s EASY to make and flavor-PACKED. The sweetness of the pear mellows out the tangy bite of the Gorgonzola.

Servings: 16-20 bites

Ingredients:

2 Bosc or Bartlett pears

2 cups arugula

12-16 slices prosciutto

6 ounces Gorgonzola cheese, thinly sliced

Directions:

Cut each pear into 8-10 segments. If you’re making in advance, place the slices in water with some lemon juice to prevent browning.

Place a piece of arugula and a slice of Gorgonzola cheese against the segment of pear, and wrap tightly with prosciutto.
