Caprese salad is a simple Italian salad, typically served as a first course. With only 3 staple ingredients (ripe tomatoes, buffalo mozzarella, and fresh basil leaves), it’s a very quick and easy meal to prepare. The salad was originally created after the domestication of tomatoes in Italy in the 16th century and was made to resemble the colors of the Italian flag (red, white, and green). This particular variation is dressed with flavor-packed basil pesto.
Servings: 1
Ingredients:
1 medium tomato, sliced
1 ball of buffalo mozzarella, sliced
3 whole basil leaves
1 tablespoon basil pesto (check out my fresh recipe HERE)
Directions:
On a starter-sized plate, arrange the tomato slices, mozzarella slices, and fresh basil leaves. Layer the dish with tomato, then mozzarella, then basil. Repeat three times.
Spoon approximately one tablespoon of basil pesto over top. If the pesto is too thick, whisk it with some extra virgin olive oil to thin.
Enjoy immediately.
