This tasty salad is a spin on the classic Italian caprese salad and is perfect for a light (yet protein-packed) lunch. Throw some greens in a bowl, add some tasty chopped ingredients, dress with olive oil and aged balsamic vinegar. Easy. Quick. Healthy. Delish!!!
Servings: 1
Ingredients:
2 cups preferred greens (arugula, baby spinach, microgreens)
4-6 ounces chicken, chopped
1 large tomato, chopped
1 piece buffalo mozzarella, chopped into small pieces
2 tablespoons fresh basil, chopped
Extra-virgin olive oil
Aged balsamic vinegar
Salt and pepper
Directions:
Place greens in a bowl.
Top with chicken, tomatoes, buffalo mozzarella, and fresh basil.
Dress with good extra-virgin olive oil and aged balsamic (aged is better – thicker and sweeter). Add salt and pepper to taste.
