These flavor-packed burgers are a healthy alternative to regular burgers. Jam packed with healthy ingredients like lentils, sweet potato, and white beans, they are both filling and nutrient dense. They can be served on a bun, on a salad, or by themselves. I’m providing you with the ingredients for the patties and the chipotle sauce, but get creative and play with additional toppings. How about topping these guys off with avocado and arugula? Maybe some crunchy slaw for texture? Sub cilantro for chili powder in the sauce and you have a cilantro and lime aioli. 3/4 cup cooked red lentils
1 cup ground walnuts
1 cup cooked white beans (e.g., cannellini), drained and rinsed
1 cup mashed sweet potato (approximately one medium sweet potato)
1 shallot, diced
2 garlic cloves, minced
1 jalapeno, minced
1/4 cup flour (I used buckwheat flour, but any flour or breadcrumbs will work)
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1/4 teaspoon oregano
Salt and pepper to taste
1/2 cup mayo
1/2 teaspoon chili powder
Juice from 1/2 lime
Salt and pepper
For the patties, combine all ingredients in a large bowl and mix well. With your hands, form the mixture into 6 large patties.
Using a grill or a grill pan, cook the burgers for three to four minutes per side.
For the aioli, combined mayo, chili powder, lime juice, salt, and pepper.
Serve the burgers by themselves, on a bun, or over a salad dressed with extra virgin olive oil. Top with the aioli, and enjoy!
