This delicious condiment is simple to make and is perfect served on top of seven vegetable couscous. Also try the caramelized onions on top of pork or chicken.

Ingredients:
2 tablespoons olive oil
2 large yellow onions, thinly sliced
1/2 cup raisins
1 tablespoon granulated sugar
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
1/4 teaspoon black pepper
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
Directions:
Heat the oil in a large saucepan. Add the onions and cook over low heat, covered, for 15 minutes, stirring occasionally.
Stir in the raisins, sugar, cloves, cinnamon, pepper, ginger, and nutmeg.
Cook, covered, for approximately 30 minutes, or until the onion is tender and dark brown, stirring occasionally. Add small amounts of water to the onions, if needed, to keep the onions from burning.
