Ingredients:
1 pound cucumbers, peeled, seeded, and diced
1 pound tomatoes, peeled, seeded, and diced
2 tablespoons parsley, chopped
1 tablespoon onion, finely chopped
2 tablespoons lemon juice
3 tablespoon olive oil
Salt and pepper to taste
Directions:
Add all ingredients to a large bowl. Mix well until the vegetables are well-coated and adjust seasoning to taste.
Allow the mixture to marinate, covered, in the fridge for up to one hour before eating.
